Healthy Blondies
If you are like myself and Gabby, we LOVE snacks and often times fall into eating some things that we shouldn’t eat. So what we do to attempt to make healthier choices when it comes to snacks at night. So we found these healthy blondies and they will surprise you especially after looking at the ingredient list. Feel free to share this healthy blondes recipe with your friends and family!
Gluten Free, Vegan Healthy Blondies
1 can (15 oz) garbanzo beans, rinsed and drained
1/2 cup peanut butter or other nut butter
1/3 cup pure maple syrup, honey or 6 dates softened
2 teaspoons vanilla
1/2 tsp salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/3 cup vegan chocolate chips or other
Instructions:
In a food processor, add all ingredients except chocolate chips and process until batter is smooth. Fold in chocolate chips.
Grease 8×8 pan with coconut oil and spread batter, sprinkling with 2 tablespoons of chocolate chips on top. Bake 350 for 20 min. or until toothpick comes out clean and edges are brown. Do not overcook. Slice into squares and serve your healthy Blondies!
Tried these while on the 21 day fix!! They are soooo tasty! Although my only caveat is to wait until the next day to eat them. That extra time allows the beans to moisten the batter (similar to baking with bananas or pumpkin).
